Season and cook the chicken
- Season the thin-sliced chicken breast with half the ranch seasoning packet (about 0.5 packet/1 oz), coating evenly.
- Heat olive oil in a skillet over medium-high heat and cook the chicken for 4–5 minutes per side until cooked through, flipping once for even browning.
- Transfer the cooked chicken to a plate, rest briefly, then slice as needed into bite-size pieces so it’s easy to fill tacos.
Griddle the folded tortillas
- Fold each flour tortilla in half to form a taco-shell shape.
- Griddle the folded tortillas in a dry skillet over medium heat until crispy on both sides, then add shredded cheddar so it melts inside (about 1–2 minutes).
Assemble and finish
- Fill each crispy tortilla shell with ranch chicken, crumbled bacon, shredded romaine, halved cherry tomatoes, and diced red onion.
- Drizzle with ranch dressing, then dust with the remaining ranch seasoning for a bold finish.
Notes
For the crispiest shells, griddle the folded tortillas in batches so they don’t steam, and keep heat at medium so the cheddar melts without burning the tortilla. Store assembled tacos in the fridge up to 2 days, but keep tortilla shells separate if possible for best texture; reheat chicken and tortillas separately. Freezing isn’t recommended for assembled tacos. For a lower-fat swap, use turkey bacon and reduced-fat cheddar while keeping the ranch seasoning the same.
