Ingredients

Sausage base
  • 1 lb Italian sausage
  • 1 onion
  • 4 clove garlic
  • 1 tsp Italian seasoning
  • 1 tsp red pepper flakes Use to taste for mild to medium heat; start with 1/2 tsp if you prefer less.
Soup and vegetables
  • 1 head cauliflower
  • 4 cup kale
  • 4 cup chicken broth
  • 1.5 cup heavy cream
  • 0.5 cup parmesan Grated
Seasoning
  • 0.25 salt and pepper to taste Season at the end to balance flavors.

Equipment

  • 1 Dutch oven

Method

Brown the sausage
  1. Brown the sausage slices in a large pot until they develop color, then remove and set aside.
  2. Leave the rendered fat in the pot for the next step; it should lightly coat the bottom.
Sauté aromatics
  1. Sauté the onion in the sausage fat for 4 minutes.
  2. Add the garlic and Italian seasoning and cook for 1 minute, stirring until fragrant.
Simmer cauliflower
  1. Add the chicken broth and cauliflower, then simmer for 15-18 minutes until very tender.
  2. Keep the pot at a steady simmer so the cauliflower softens evenly.
Blend and add cream
  1. Blend about half the soup smooth, then return it to the pot.
  2. Stir in the heavy cream until the broth looks creamy and cohesive.
Wilt kale and finish
  1. Add the kale, sausage, red pepper flakes, and parmesan, then cook for 5 minutes until the kale wilts.
  2. Season with salt and pepper to taste, then serve hot.

Notes

Pro tip: blend only about half the soup so you keep some cauliflower texture while still getting a creamy body. Refrigerate leftovers in an airtight container up to 4 days; reheat gently to avoid curdling. Freezing is not recommended because cream-based soups can separate when thawed. For a dairy-light option, use half-and-half and reduce parmesan slightly, then add more to taste after reheating.
