Ingredients
  

Boneless skinless chicken breasts
  • 2 lb boneless skinless chicken breasts
Cream cheese
  • 8 oz cream cheese Cubed so it melts smoothly into the sauce.
Cream of chicken soup
  • 1 can (10.5 oz) cream of chicken soup
Ranch seasoning mix
  • 1 packet (1 oz) ranch seasoning mix
Chicken broth
  • 0.5 cup chicken broth
Garlic powder
  • 0.5 tsp garlic powder
Black pepper
  • 0.25 tsp black pepper
Fresh chives
  • 0.25 cup fresh chives For garnish only; adjust to taste.

Method
 

Cook the chicken
  1. Place the chicken breasts into the slow cooker.
  2. Mix the cream of chicken soup, chicken broth, ranch seasoning mix, garlic powder, and black pepper, then pour the mixture over the chicken.
  3. Place the cream cheese cubes on top of the chicken and sauce.
  4. Cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is very tender.
Shred and finish the sauce
  1. Remove the chicken from the slow cooker and shred it with two forks.
  2. Stir the sauce in the slow cooker until the cream cheese is fully incorporated and smooth.
  3. Return the shredded chicken to the sauce and stir to combine until evenly coated.
Serve
  1. Serve the creamy ranch chicken over mashed potatoes, rice, or in sandwich rolls, and garnish with fresh chives.

Notes

For the smoothest ranch sauce, make sure the cream cheese is fully melted before stirring in the shredded chicken. Refrigerate leftovers in an airtight container for up to 4 days; reheat gently in the microwave or on the stove with a splash of broth if needed. Freezing is not ideal because dairy can change texture, but you can freeze for up to 2 months if necessary—thaw overnight in the fridge and reheat low. For a lighter option, use low-fat cream cheese and low-sodium cream of chicken soup.
