Ingredients
  

Chicken thighs
  • 8 chicken thighs bone-in and skin-on
  • 0.5 cup buffalo sauce
  • 0.25 cup honey
  • 2 tbsp butter melted
  • 1 tbsp apple cider vinegar
  • salt to taste
  • pepper to taste
  • blue cheese dressing for serving
  • celery sticks for serving

Method
 

Make the honey-buffalo glaze
  1. Mix buffalo sauce, honey, melted butter, and apple cider vinegar in a bowl until smooth.
  2. Reserve 1/3 cup of the sauce for basting and set aside.
Season and marinate
  1. Season chicken thighs with salt and pepper.
  2. Brush the chicken with some of the sauce.
  3. Marinate for 30 minutes.
Grill and baste
  1. Preheat the grill to medium heat and place chicken skin-side down, cooking for 8-10 minutes until the skin is crisping and releasing easily.
  2. Flip the chicken and grill for 8-10 more minutes, basting frequently with the reserved sauce until the glaze turns sticky and glossy.
  3. Continue grilling until the internal temperature reaches 165°F, using the sticky glaze as your visual cue.
Serve
  1. Serve the grilled honey buffalo chicken thighs with blue cheese dressing and celery sticks.

Notes

For the crispiest skin, keep the grill at medium heat and avoid moving the thighs too often during the first skin-side grilling. Refrigerate leftovers in an airtight container for up to 3 days; freeze yes, up to 2 months (best reheated on a hot grill or skillet). If you want a milder flavor, reduce buffalo sauce slightly or use mild buffalo sauce while keeping the honey-butter-vinegar base.
