Ingredients

Chicken
  • 2 lb bone-in chicken thighs Or substitute boneless chicken breasts.
Seasonings and gravy mix
  • 1 packet (1 oz) ranch seasoning mix
  • 1 packet (1 oz) au jus gravy mix
Butter and peppers
  • 0.5 cup butter About 1 stick.
  • 9 pepperoncini peppers Use 8–10.
Serving options
  • 1 mashed potatoes For serving.
  • 1 egg noodles For serving.
  • 1 sandwich rolls For serving.

Equipment

  • 1 Dutch oven

Method

Slow-cook the chicken
  1. Place the chicken in the slow cooker, arranging it in an even layer so it cooks uniformly.
  2. Sprinkle the ranch seasoning mix and the au jus gravy mix directly over the chicken.
  3. Scatter the pepperoncini peppers around the chicken and lay the butter on top in one piece.
  4. Do not add any additional liquid.
  5. Cook on low for 6–8 hours until the chicken is very tender and falling off the bone, OR cook on high for 3–4 hours for faster shredding.
Shred and serve
  1. Remove the chicken from the slow cooker and shred it with two forks.
  2. Return the shredded chicken to the slow cooker juices and stir to coat.
  3. Serve the chicken over mashed potatoes, egg noodles, or in sandwich rolls.

Notes

For the deepest flavor, keep everything dry until cooking—no extra water or broth—so the ranch and au jus mixes dissolve into a buttery pepperoncini au jus. Store leftovers in the refrigerator up to 4 days; reheat gently. Freezing is yes (up to 3 months), though texture is best when thawed in the fridge overnight. If you want a lower-fat version, use reduced-fat butter and consider boneless skinless chicken breasts.
