Ingredients

Pork chops
  • 4 pork chops 1-inch thick
Classic marinade
  • 0.25 cup olive oil
  • 2 tbsp soy sauce
  • 2 tbsp lemon juice
  • 2 clove garlic minced
  • 1 tsp dried herbs
  • 1 salt to taste
  • 1 pepper to taste

Method

Make the marinade and marinate
  1. Choose the classic marinade and whisk olive oil, soy sauce, lemon juice, garlic, dried herbs, salt, and pepper together until combined.
  2. Place pork chops in the marinade and marinate for 30 minutes to 4 hours in the refrigerator, turning once halfway if possible.
Grill and rest
  1. Preheat the grill to medium-high heat so the grates are hot before cooking.
  2. Grill pork chops for 5-6 minutes per side with the lid closed as much as possible, until the internal temperature reaches 145°F.
  3. Transfer pork chops to a plate and let rest for 5 minutes before serving so the juices redistribute.

Notes

Pro tip: use a thermometer and pull the chops at 145°F, then rest 5 minutes—this is what keeps them juicy without overcooking. Refrigerate leftovers up to 3 days; freeze cooked pork chops up to 2 months (thaw in the fridge). For a lighter option, replace olive oil with avocado oil or use a reduced-oil marinade while keeping the lemon and soy ratio.
