Ingredients

Chicken and seasonings
  • 2 lb boneless skinless chicken breasts Use evenly sized breasts for consistent cooking.
  • 1 packet (1 oz) ranch seasoning mix
  • 0.5 cup chicken broth
  • 6 bacon Cook until crisp, then crumble.
Creamy sauce
  • 8 oz cream cheese Cube it so it melts smoothly.
  • 1 cup shredded cheddar cheese
  • 1 green onions Slice for garnish.

Equipment

  • 1 Dutch oven

Method

Slow cook
  1. Place the chicken breasts in the slow cooker.
  2. Sprinkle the ranch seasoning mix over the chicken and pour the chicken broth around it.
  3. Place the cream cheese cubes on top.
  4. Cook on low for 6–7 hours or high for 3–4 hours until the chicken is tender; the sauce should look creamy around the edges.
Shred and finish
  1. Remove the chicken and shred with two forks until no large chunks remain.
  2. Stir the cream cheese into the sauce until fully smooth and melted, looking glossy with no visible lumps.
  3. Return the shredded chicken to the slow cooker, then stir in half the bacon and all the cheddar until melted and evenly coated.
  4. Serve topped with the remaining bacon and green onions on buns, over mashed potatoes, or in bowls; the cheese should stay thick and creamy.

Notes

Pro tip: cube the cream cheese and place it on top so it melts evenly during the long cook, helping you avoid lumps in the sauce. Refrigerate in an airtight container for up to 4 days; reheat gently in the microwave or on the stovetop until warmed through. Freezing is yes—freeze up to 2 months and thaw overnight in the fridge before reheating. For a lighter option, swap in reduced-fat cream cheese and part-skim cheddar to cut saturated fat while keeping the creamy texture.
