Slow-cook the chicken
- Place the boneless skinless chicken thighs in the slow cooker.
- Whisk together Sweet Baby Ray's BBQ sauce, brown sugar, apple cider vinegar, garlic powder, and smoked paprika.
- Pour the sauce over the chicken so the thighs are coated.
- Cook on low for 6–7 hours, until the chicken is very tender and easily pulls apart.
Shred and coat in sauce
- Remove the chicken and shred with two forks.
- Return the shredded chicken to the slow cooker and stir it into the sauce until glossy and evenly coated.
Serve
- Serve the BBQ shredded chicken on toasted brioche buns with pickles, or over white rice.
