  • 1 can (14 oz) diced tomatoes
Greens
  • 3 cup kale Roughly chopped.
Aromatics and broth
  • 1 onion Diced.
  • 4 clove garlic Minced.
  • 4 cup vegetable broth
Spices and oil
  • 2 tbsp olive oil
  • 2 tsp cumin
  • 1 tsp turmeric
  • 1 tsp smoked paprika
  • 0.5 tsp cinnamon
  • 0.25 tsp cayenne
Finishing
  • 1 tbsp lemon juice
  • 0.25 fresh cilantro For serving.
  • 1 crusty bread For serving.
  • 0.5 salt To taste.
  • 0.5 black pepper To taste.

Equipment

  • 1 Dutch oven

Method

Sauté aromatics
  1. Heat the olive oil in a Dutch oven over medium heat, then sauté the onion for 4 minutes until softened and fragrant (visual cue: slightly translucent edges).
  2. Add the garlic and all spices (cumin, turmeric, smoked paprika, cinnamon, and cayenne) and cook for 2 minutes until very fragrant (visual cue: spices darken slightly and smell toasted).
Simmer the stew
  1. Add sweet potatoes, chickpeas, diced tomatoes, and vegetable broth, then bring the mixture to a boil (visual cue: active bubbling across the surface).
  2. Reduce to a simmer and cook for 20-25 minutes, stirring once or twice, until the sweet potatoes are tender (visual cue: fork-tender cubes).
Wilt kale and finish
  1. Stir in the kale and cook for 5 minutes until wilted (visual cue: bright green leaves turn darker and soften).
  2. Stir in the lemon juice and season with salt and black pepper to taste (visual cue: broth tastes balanced and bright).
  3. Serve hot with fresh cilantro and crusty bread (visual cue: garnish sits on top, with bread on the side).

Notes

For the best texture, keep the sweet potato cubes fairly even so they tenderize at the same rate. Store leftovers in the refrigerator up to 4 days; reheat gently on the stove until steaming. Freeze up to 2 months—note the kale may soften further after thawing. For a lower-sodium option, choose no-salt-added vegetable broth and season with salt gradually at the end.
