Ingredients

Campfire sandwich
  • 8 bread
  • 8 deli ham
  • 8 turkey
  • 8 cheese (cheddar or Swiss)
  • 4 tbsp butter, softened
  • 1 mustard and mayo (optional) Use if you like a tangy or creamy spread.

Equipment

  • 1 cast iron skillet

Method

Prep the bread
  1. Butter one side of each bread slice so the exterior browns and crisps on the grate.
Assemble sandwiches
  1. Build sandwiches with butter-side out: bread, cheese, ham, turkey, cheese, bread for a melty, layered interior.
Grill over the campfire
  1. Place sandwiches on a campfire grate over medium heat and grill for 4-5 minutes per side until bread is golden and cheese melts, watching for clear grill marks.
Finish and serve
  1. Remove from heat, cut in half, and serve hot when the cheese pulls slightly at the cut edge.

Notes

Pro tip: keep the heat at medium so the cheese fully melts before the bread darkens; if your campfire runs hot, move the grate slightly farther from the coals. Store leftovers covered in the fridge up to 3 days; reheat in a skillet or on a grate until hot and re-melted. Freezing is not recommended because bread can lose texture. For a lighter option, use reduced-fat cheese and lean turkey while keeping the same grilling times.
