Ingredients

For pecan shortbread crust
  • 1.5 cup flour
  • 0.75 cup powdered sugar
  • 0.75 cup cold butter
  • 0.75 cup pecans, chopped pressed into the pan and baked
For cream cheese layer
  • 8 oz cream cheese softened and beaten smooth
  • 1 cup powdered sugar
  • 1 tsp vanilla
  • 1 cup whipped topping for the cream cheese layer
For chocolate pudding layer
  • 2 packages (3.9 oz each) instant chocolate pudding
  • 3 cup milk used to whisk pudding until thick
For topping
  • 8 oz whipped topping
  • 1 caramel sauce
  • 1 chocolate sauce
  • 1 pecan halves
  • 1 toffee bits

Equipment

  • 1 sheet pan
  • 1 mixing bowl
  • 1 stand mixer

Method

Make and bake the pecan shortbread crust
  1. Press the pecan shortbread crust mixture firmly into the pan, then bake at 350°F for 15 minutes until set and lightly golden around the edges (visual cue: crust looks dry and firm, not glossy). Cool completely.
Build the cream cheese layer
  1. Beat the cream cheese with powdered sugar and vanilla until smooth, then fold in the whipped topping (visual cue: no lumps remain). Spread the cream cheese layer evenly over the cooled crust.
Add the chocolate pudding layer
  1. Whisk the instant chocolate pudding with the milk until thick, then spread it over the cream cheese layer (visual cue: pudding holds ridges briefly when you drag the whisk through it).
Finish and chill
  1. Spread the remaining whipped topping over the pudding in an even layer (visual cue: surface becomes fluffy and level).
  2. Drizzle caramel sauce and chocolate sauce over the top, then scatter pecan halves and toffee bits (visual cue: a layered drizzle pattern with visible nuts and bits).
  3. Refrigerate for 4 hours until fully set, then cut into squares to serve (visual cue: clean slices that hold their layers).

Notes

Pro tip: cool the crust completely before adding layers so the cream cheese doesn’t melt or slide. Refrigerate covered for up to 4 days; freeze is not recommended because whipped topping can lose texture after thawing. For a lighter option, use reduced-fat cream cheese and reduced-sugar instant pudding if available.
